It seems to make its way to the back of the fridge. We don't let it grow hair, really! But we figured out how to make meals out of leftover, leftover meals. Stir frys are great too! You can usually find all kinds of great seasonings at the 99 cents store. Heck, you just never know what you'd find there.

To find the time we unplugged the TV and quit cable. Now my kids(3) all know how to eat right, cook and read.

Dice an onion and sautee in vegetable oil until soft.

Add 2 tbsps paprika and 1/4 cups water.

Cut chicken in pieces and add to onion/paprika mix along with one bell pepper (sliced)

Mix well and then add enough water to cover chicken about half way.

Bring to boil, season to taste with salt and pepper and simmer over low flame until chicken is done (about 45 minuts - 1 hour). Before serving, add 1 cup of sour creme, and heat through. Serve over pasta or rice.

Another easy way to prepare chicken, throw some barbecue sauce and wine in a crockpot (or pot on the stove on low).

Personally, I became a vegetarian and have found it healthier and less expensive to eat.

Do I have a simply delish dish for you -- Chicken Jambalaya. Brown a few leg quarters in a large pot. Cut up 1 onion and saute until tenter, then add 5 cups of water to boil for 1/2 hour. Finally add 2 cups rice to finish cooking covered for 20 minutes; turn off heat and let stand 15 minutes while you have a glass of wine and set the table.

re: 99 Cent Chef: He's the ultimate frugal gourmet

Bread the chicken and lightly fry (for color), squeezing lime juice into the pan as you do so. Place the leftover pasta in a baking dish with the chicken on top. If you like, place bacon on top of the chicken. Either way, sprad tomatoe paste on the chicken and then sprinkle with cheese or cover with swiss (very good!), provolone, or even shredded cheddar. See where this is going?? Bake until heated through and the cheese is bubbly.

Another idea is to use slow cooker recipes (plenty available online and in book stores). My wife likes to do that and the meals are always good. Me, I prefer to be more "involved" when cooking.
