Her lunches pay for themselves

Posted May 07 2008, 01:48 PM by Donna Freedman

We're in awe of the way "HollyM" does lunch. This thrifty reader starts by cooking big batches of soups, stews, stuffed peppers, lasagna, casseroles, enchiladas and other goodies -- all of it made with on-sale ingredients. The entrees get frozen in individual servings because variety is the spice of lunch.

"No boredom. Lunches ready to grab. Saves time/energy/money."

But wait -- it gets better. Her company pays for actual hours worked, and brown-bagging lets HollyM eat and get back on the clock quickly. Combined with coming in five minutes early and/or staying five minutes late, this can amount to three hours of overtime per each two-week pay period.

Those of us accustomed to eating lunch "al desko" salute you, HollyM. And those of you who want to use up all your lunch breaks? Bringing a meal from home is not only cheaper and better for you than a fast-food run, it can result in a few extra minutes each day to do the New York Times crossword puzzle -- or read the supermarket ads.
